Abstract
The present invention provides a method for producing diacylglycerol with high yield and high yield in a short time. Triacylglycerol is reacted with water and an enzyme to obtain a mixture containing diacylglycerol, monoacylglycerol and free fatty acid, and water in the mixture is removed by dehydration, and monoacylglycerol, free fatty acid and remaining residue are obtained. Triacylglycerol is separated by at least one separation method to obtain high purity diacylglycerol. An oil / fat composition containing phytosteryl ester and / or ferulic acid ester in a ratio of 0.5 wt% to 25 wt% with respect to diacylglycerol is also provided in the diacylglycerol obtained from the above method.
