Oi Ming Lai (2011) Procedure for the production of diacilglicerol. ES:06835632T.

Abstract

A process for producing diacylglycerol, said process comprising the steps of: (i) reacting triacylglycerol with water and an enzymatic preparation having a hydrolytic activity at a temperature in the range of 20 ° C to 90 ° C to obtain a mixture of diacylglycerol, monoacrylicglycerol and acid fatty free; (ii) separating the water content in the mixture from step (i) by dehydration; and (iii) separating monoacylglycerol, free fatty acid and residual triacylglycerol by at least one separation process to obtain a high purity diacylglycerol; wherein the amount of water in the reaction mixture of step (i) is 20 to 180 parts by weight of the enzyme preparation, and step (i) is carried out until between 5% and 50% of free fatty acids, thus producing diacylglycerol of up to 96% purity with high yield in a short period of time.
