Abstract

A procedure to identify a pig content in a food, in which the procedure includes the steps of: a) extracting deoxyribonucleic acid (DNA) from a sample of pork; b) design a direct primer and a reverse primer based on the mitochondrial gene ND5 of pork; and c) perform a polymerase chain reaction (PCR) test on the direct and reverse primers; characterized in that: the direct primer sequence is SUS-FWD: 5'-AGC TGC ACT AGA AGC AAT CC-3 ') and the reverse primer sequence is SUS-RVS: 5'-ATG CGT TTG AGT GGG TTA GG- 3'.
